PREP COOK SERVES

- 3 tbsp. extra virgin olive oil
- 1 tbsp. white wine vinegar
- 1 tbsp. capers, drained
- 1 tbsp. Just Add Basil Pesto Blend
- 1½ tsp. Just Add Garlic Purée
- ½ tsp. dijon mustard
- 900g mixed baby tomatoes, halved
- 225g mozzarella cheese, chopped into bite-size chunks
- Whisk together the oil, white wine vinegar, Herb Blend, Garlic Purée, mustard and capers in a large bowl.
- Fold in the tomatoes and mozzarella and season with salt and pepper.
- Serve immediately or chill for up to 2 hours.
