  • 3 tbsp. extra virgin olive oil
  • 1 tbsp. white wine vinegar
  • 1 tbsp. capers, drained
  • 1 tbsp. Just Add Basil Pesto Blend
  • 1½ tsp. Just Add Garlic Purée
  • ½ tsp. dijon mustard
  • 900g mixed baby tomatoes, halved
  • 225g mozzarella cheese, chopped into bite-size chunks

  1. Whisk together the oil, white wine vinegar, Herb Blend, Garlic Purée, mustard and capers in a large bowl.
  2. Fold in the tomatoes and mozzarella and season with salt and pepper.
  3. Serve immediately or chill for up to 2 hours.
