Easy Basil Pesto

 

 

Easy Pesto


This classic Pesto recipe is super easy to make and is a food cupboard staple. 

 Preparation Time: 5 minutes

 

Ingredients:

  • Just Add™ Basil
  • 60g toasted pine nuts
  • 2 cloves of garlic, roughly chopped
  • Handful of parsley
  • 50ml olive oil

 

Method:

  1. Add the pesto ingredients into a food processor and pulse until the mixture becomes a paste. If you don't have a food processor, use a pestle and mortar and grind the ingredients together until you reach the desired consistency.

 

Serving suggestions:

  • Try adding to pasta for a quick weeknight meal!
  • Spread onto sandwiches as a substitute for butter!
  • Stir through sour cream, greek yoghurt or cottage cheese for a tasty quick dip!

Pasta Pesto with Just Add™ Basil

This recipe features a lovely pesto made from our Just Add™ Basil, which can be used in many other dishes too!

 Ingredients: 
  • 500g pasta
  • 100g baby spinach
  • 50g wild rocket
  • Small handful of flat leaf parsley
  • Small handful of sage
  • Small handful of chives
  • Tarragon
  • 4tbsp olive oil
  • 100g Parmesan cheese

For the Pesto:

  • Just Add™ Basil
  • 60g toasted pine nuts
  • 2 cloves of garlic, roughly chopped
  • Handful of parsley
  • 50ml olive oil

 

 
 Method: 

 

  1. Cook the pasta, drain and return to the pan. Add the pesto and stir over a low heat for 2-3 minutes. Add the spinach and stir well for 1 minute until it has wilted.
  2. Add the rocket, parsley, sage, chives, tarragon and the oil. Take off the heat and stir well before serving. Sprinkle with grated parmesan and garnish with additional rocket leaves.
