Blueberry Yogurt Bark
- 2 tbsp Just Add Ginger Puree
- 2 tbsp maple syrup or runny honey
- 250g blueberries
- 1 spring of mint
- 500ml Greek-style natural yogurt
Mix together the yogurt, maple syrup, Just Add Ginger Pureee and stir in the blueberries.
Lightly grease a shallow 16cm x 26cm x 3cm baking tray and line with nonstick baking parchment. Pour in the mixture and spread out so that the blueberries are evenly dispersed.
Shred the mint leaved and scatter over the baking tray
Cover with cling film and freeze for 2 hours, or until solid. Break up the bark and serve immediately.
