Pulled Jackfruit Tacos

Ingredients

BBQ Jackfruit

  • 1 tin of drained jackfruit
  • 118g ketchup
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • Dash of mustard powder
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tbsp English mustard
  • 1 tbsp Just Add Chilli
  • 1 tbsp Just Add Garlic

Guacamole

  • Avocado
  • 1 tsp Just Add Mild Guacamole

Salsa

  • 250g Tomatoes
  • 1 tsp Just Add Salsa Dip Starter

Taco

  • 6 Taco shells
  • Lettuce
  • Coriander

Method

1.

Heat the oven to 200C

Put a pan over medium heat and combine the ketchup, brown sugar, Worcestershire sauce, apple cider vinegar , mustard powder, salt, onion powder, Just Add Chilli Pepper Puree, Just Add Garlic Puree and English mustard.

Add the drained jackfruit.

Transfer to a baking tray and place in the oven for 30 minutes.

Meanwhile to make the guacamole mash the avocado and combine with the Just Add Mild Guacamole Dip Starter and lime, then set aside.

Next make the salsa by combining the Just Add Salsa Dip Starter, diced cherry tomatoes and finely diced red onion.

7.

When ready remove the jack fruit from the over and shred using a fork.
